Chicken, Eggplant, or Veal Parmigiana?

As many people here should know, there are three different forms of Parmigiana: Chicken Parmigiana, Eggplant Parmigiana, and Veal Parmigiana.

 

Although Eggplant Parmigiana is the only one that is truly Italian, I still prefer Chicken Parmigiana to both Eggplant and Veal.

I don't care for the whole parmigiana crappola. As you said it's not really authentic. However, what I do love is are veal meatballs. There's a nice authentic Italian restaurant that I frequent that specializes in Roman cuisine that makes 'em and they usually run out. They either import their items direct from Italy or buy fresh organic and natural items from the Farmer's Market there in Union Square. :cool:
