ABQ RIDE Posted March 22, 2011 Share #1 Posted March 22, 2011 As many people here should know, there are three different forms of Parmigiana: Chicken Parmigiana, Eggplant Parmigiana, and Veal Parmigiana. Although Eggplant Parmigiana is the only one that is truly Italian, I still prefer Chicken Parmigiana to both Eggplant and Veal. Link to comment Share on other sites More sharing options...

However, what I do love is are veal meatballs. There's a nice authentic Italian restaurant that I frequent that specializes in Roman cuisine that makes 'em and they usually run out.
