It's not the Yukon itself that's so expensive - it's the truffles on top. "It elevates something that people might consider pedestrian," said Jeffrey Crawford, executive chef of Totally Baked, a restaurant that opened this week at 8 W. 18th St. in Manhattan's Flatiron District. "It's comfort food, but taken to a higher level." The recipe starts with a simple baked Yukon potato - then loads it with truffle butter, truffle oil, heavy cream and shaved pieces of truffle.
