A derail sign attached to the tracks indicates the presence of a derail at that location. A derail (noun) is a device that (as you can guess) derails a railcar that passes over it. While this sounds counterproductive, they are designed to protect the mainline tracks from a roll-away railcar. A railcar that was not properly tied down could roll down a hill to the main and potentially strike a moving train.
